By means of bathing in brine, further water is removed from the edge of the new cheese and the rind formation is prepared. The salt content of the brine is determined by your customised recipe and is flexible in the Sulbana plants. The salt contributes to the formation of flavour in the cheese and helps the product to become the distinct trademark of you as a manufacturer.
